1 courgette, without the skin removed, chopped in slices of 1/2 cm.
1 aubergine (eggplant), same as above
whole meal pasta penne rigata for four persons
1 tin of chopped tomatoes in tomato-juice
mixed fresh herbs like basil, thym, rosemary
a lot of freshly ground pepper
1 big red onion, chopped
1 red chili pepper seeds removed, sliced.
3 gloves of garlic, chopped
6 big muchrooms in slices
Put a pan of water on the stove to cook the pasta. Take a big frying pan and heat the olive oil. Fry the onion, the chilli pepper and courgette untill it starts to colour. (if the water boils for the pasta, add the pasta and cook for the amount of minutes mentioned) Then add the aubergine and the mushrooms. Keep stiring. Add pepper and salt. Add the tomatoes and the garlic after three minutes and 1 minute before the pasta is ready, the herbs. Enjoy this quick and healthy meal.
