1 pita bread, cut in half (form 2 circles)
1 Tomato (diced)
6 tablespoons Tomato Sauce
6 mushrooms - sliced thin
1/2 Red Pepper - sliced very thin
6 spinach leaves
1 clove garlic, minced
crushed red pepper
cracked black pepper
Toast pita slices in toaster oven for 45 seconds, making slightly crisp. Remove.
Smear tomato sauce onto pita slices. Litter with diced tomato. Sprinkle with spinach, mushrooms, red pepper, (or any vegetable of your choice). Sprinkle some diced garlic on it.
Put in toaster oven until vegetables start to brown.
Remove pitas, sprinkle them with spices, enjoy.
*Sometimes I put a hint (very thin slice) of (use your favorite vegan cheese) on top, to give it a little texture. Since I've been making this, I look at a regular pizza and get really turned off to it. Too greasy.
