2 cups cooked mashed potatoes or instant mashed potato
1 can (or 2 cups) mashed pumpkin, excess water pressed out
1 cup textured soy protein granules, reconstituted and mixed with tomato sauce
6 tablespoons crushed almonds
Layer mashed potato on bottom of baking dish, pat down a little.
Top with the textured soy protein and tomato sauce.
Top with the pumpkin and pat down a little.
Sprinkle with the almonds.
Bake at 350 for about 20 minutes.
