1 (15-ounce) can chickpeas, rinse, drain, and shake dry
1 large ripe tomato, chopped small
1/2 cucumber, chopped
6 or 8 green onions, sliced, white part only
2 limes, juice and pulp of
2 tablespoons olive oil, or to taste
2 teaspoons cumin seeds (don't try to substitute ground cumin)
pepper, to taste
1. In a bowl, combine chickpeas, tomato, cucumber, and green onion.
2. In a small jar, combine lime juice and pulp, olive oil, cumin seeds, and pepper.
3. Shake and pour over vegetable mixture. Refrigerate until serving time.
