1 carrot shredded
2 slices of bread
Several slices of cheese substitute
Lettuce, sprouts, green pepper and onions if desired
This recipe has a lot of room for variation. The way I usually make it is as follows: I shred a carrot or two depending on size, using either a cheese grater or a potato peeler. I prefer to use rye vegan bread, but multi grain vegan breads are nice as well. I lightly toast the slices of vegan bread until the cheese is melted. I place the shredded carrots on one of the slices of vegan bread and quickly place the other slice on top before the cheese slides off. Try adding alfalfa sprouts, green pepper, onion, etc. to suit your tastes. (I find that it tastes good with carrots alone).
