cooking oil
1 medium onion,chopped
1 garlic clove, minced
2 medium carrots, sliced thin
1 medium zuccini, sliced thin
2 cubes vegetable bouillon
6 cups water
1/2 teaspoon dried basil
1 teaspoon dried parsley
3 tablespoon tomato paste
1 package fresh soy tortellini
Saute garlic and vegetables in oil until soft, about 10 minutes. Add water, vegetable broth cubes, spices, and tomato paste. Bring to a boil and simmer for 15 minutes. Add tortellini and cook according to package.
