4 cups vegetable broth (or water plus bouillon)
1 tablespoon chili sauce or curry sauce
1 cup instant potato flakes
4 grated carrots
4 grated parsnips
1 cup finely diced spinach
Bring broth to a boil. Add potato flakes and stir well. Add carrots and parsnips. Reduce heat, simmer 30 minutes, stirring occasionally. Add spicy sauce and spinach, simmer for one more minute until spinach is just wilted. Enjoy!
