1/2 cup nondairy milk
1/2 cup water or vegetable broth
1 medium onion, chopped
2 medium potatoes, sliced
fresh ground pepper and salt, to taste
1. Add milk and water/broth to skillet on medium, then add onion.
2. Add potatoes, and grind some pepper over the top. Bring to a simmer, covered.
3. Turn potatoes over with a spatula every 15 minutes or so for about 45 minutes. Season, to taste By the time you're done most of the liquid should have evaporated. If the taters are still a little hard when the liquid is gone, just add a little more liquid.'
