whole wheat rotini noodles
1 red bell pepper
1 yellow bell pepper
1 roma tomato
dash of nutmeg
vegan mozzarella veggie shreds cheese
Boil noodles and spinach together (omit spinach, if desired). Then add spices, diced peppers, and diced tomatoes. I like to use the spices in the order listed, the first being used the most and so on, but add them howe'ver you like.
When done boiling, strain and put into glass baking dish that has been lightly oiled.
Sprinkle mozzarella over top, using as much as is desired.
Bake at 350 degrees until a little after the cheese has been melted. Enjoy!
