1/2 cup soy cream cheese
3/4 cup or so powdered sugar (I make my own by grinding sugar in a clean coffee grinder)
1/4 cup fine desiccated coconut
1/2 spoon vanilla essence
a splash of soy milk not more than a couple of tablespoons
Beat the cream cheese with a little soymilk. Add the powdered sugar and beat until smooth. Add the vanilla and coconut. Stir to mix.
Cover warm cake with frosting and swirl the frosting on top so there a few peaks. Put frosted cake on top rack and grill for 15 minutes or until the tops are golden brown. Take out and let cool.
