250 g pasta - any shape (cooked)
400g dried lima beans, cooked or 15oz canned lima beans, drained
small red and green capsicum
400g/15oz tomatoes, diced
4 tablespoons olive or veggie oil
1 small onion, chopped
1 teaspoon brown sugar
1 teaspoon dried oregano, thyme
2 tablespoons dried parsley
1 cup/55g bread crumbs
nutritional savory flakes (optional)
Pre Heat oven to 180C, 350F
In a sauce pan, cook onion in oil until soft.
Add tomatoes, herbs and sugar to saucepan.
Cook for around 5 minutes.
Add beans and cook for a further 10 minutes.
In oven dish lay, pasta at bottom of the dish Than add bean and tomato mixture to dish and slightly mix pasta and mixture together (only so the pasta will not burn or dry out on the bottom of the dish).
Sprinkle breadcrumbs and flakes (if using) on top of beans and pasta.
Cook in oven for 30 minutes.
