1 clove garlic, crushed
1 teaspoon freshly grated ginger
3 tablespoons soy sauce
3 tablespoons apple juice
pinch red pepper flakes or dash Tabasco
2 tablespoons oil
1 head iceberg lettuce, coarsely chopped
1. Combine all ingredients except oil and lettuce in a small bowl; blend well.
2. Heat wok or skillet and add oil; stir fry lettuce until it just begins to collapse.
3. Add sauce and toss again. The lettuce should still have some crunch to it.
Serve at once! This dish will not stand; don't prepare it until people are at the table.
This is the only recipe I have for iceberg lettuce, for which normally I have no time at all.
