1 package of regular extra-firm tofu
1/2 of a small onion, sliced
1 package of sliced baby portabella mushrooms
4 tablespoons of soy sauce
1 tablespoon olive or vegetable oil
garlic powder, for seasoning
salt and pepper, optional
Put olive oil and 2 tablespoonS of soy sauce in frying pan and set it on medium. Use soy sauce with additional seasoning if you want something a little extra.
Cut up the tofu however you like best and fry it for about 3 minutes. Season it if you like.
Split into two portions on plates.
Return the pan to the burner and put the rest of the soy sauce, some water and the mushrooms in it. Let it simmer for 3-5 minutes. During this time add as much garlic as you want, salt and pepper or whatever other seasonings you enjoy. Add onion. Stir around, enjoy the aroma, salivate until there’s only a little but of liquid at the bottom.
Cover tofu with it, and viola…a supper yummy quick and easy mushroom tofu stir fry. Enjoy!
