2 bunches kale, leaves only, rinsed & torn to 2-3 inch pieces
8 oz. jar sun-dried tomatoes in olive oil
3-4 teaspoons ground cumin
salt to taste
shredded parmesan substitute
1-1/2 lbs. bowties or penne pasta
1 head of garlic, cloves minced
Place pasta on to boil; cook until al dente and drain, then set aside. In large skillet or heavy wok, heat 6-8 tablespoon olive oil. On low-medium heat saute garlic till it begins to brown.
Add kale, stirring as it wilts. Add cumin and salt to taste. When kale is completely wilted, add entire jar of sun-dried tomatoes (oil included) and continue stirring. Saute another 2-3 minutes, adding cheese to taste as you stir.
