1/2 cup fake egg or liquidized silk tofu
3 tablespoons 2-minute cream of wheat
1 tablespoon flax seed oil
1 teaspoon vanilla extract
1/2 cup water to start
1 jar of fruit baby food
1/4 cup zero or low calorie syrup
Ok this recipe can be a little tough at times. This is the easy part. Place all the ingredients, except for the baby food and syrup, in a bowl and mix well. Pop it into the microwave and let it cook for 1 minute. Take it out and mash it a little. Place it back in for another minute. Take it out and add a little more water if it is very thick and dry. Then microwave it for an additional minute or a half. Take it out and it should have formed chunks. These chunks are the stuff that taste like pancakes!
Add the baby food and mix well and top it off with some nice maple syrup and there you go. Pancakes in a bowl. This recipe is not only great for adults, but also for toddler still learning to chew.
