4 cloves garlic
1 cup shitake mushrooms
1 cup diced fresh tomatoes
1 large zucchini sliced
1/2 purple onion chopped
1/2 red chopped bell pepper
2 sliced yellow squash
2 cups washed green spinach
3 tablespoons salsa
3 sprigs cilantro
2 tablespoons coconut or olive oil
8 leaves of Chinese cabbage
1 cup basmati white or brown rice
Stir fry in olive or coconut oil, garlic, onions, zucchini, yellow squash, red bell pepper till medium tender and still crispy.
Stir in mushrooms, tomatoes, salsa, spinach, cilantro, Chinese cabbage. Do not overcook, and then cover and turn off fire.
Place this mixture over cooked basmati white rice.
You can substitute the rice for brown, or noodles, if you prefer. This is a good combination of vegetables for flavor and wholesomeness.
