1 bag of organic tater tots
1/2 bell pepper
1 zucchini
1/3 cup onion
2 cloves garlic
1/2 tube of "Gimme Lean Sausage Style" or other vegan sausage
dash of curry powder
dash of cumin
1/2 teaspoon of hot sauce (we use homemade habanera)
dried oregano to taste
dried basil to taste
salt and pepper to taste
canola oil
Place frozen tots in oiled frying pan over medium heat. Cover.
While tots are warming up, dice the vegetables.
In a separate oiled frying pan, brown vegan sausage.
Tots should be nice and warm by this time. Break them up nice and small.
Add sausage to tots.
Use sausage pan to saute vegetables.
Add vegetables to tots & sausage.
Sprinkle in herbs and spices. Add hot sauce.
Mix well & serve.
