2 cups dates, pitted and chopped
1/3 cup water
1/2 cup unsweetened coconut flakes
Bring the dates and water to boil in a saucepan. Cook for about 10 minutes, stirring occasionally to mash the dates.
When the dates are completely mashed and the water absorbed, remove from heat and allow to cool a bit.
Scoop out heaping teaspoons of date mixture and form balls or logs and roll in coconut.
Store in fridge.
