1 cup flour
1/2 cup flaxseed
1/2 cup of sugar
1/2 of a banana, mashed (to replace egg)
2 teaspoon of baking soda
3/4 cup of soy milk
1 1/2 teaspoon of oil
1 teaspoon vanilla
1 cup chocolate chips (carob, act.)
1. Pre-heat oven to 350 F. In a bowl, mix all dry ingredients until well combined.
2. Mash banana until smooth and add to the dry mixture. Add oil and vanilla, stir well. Slowly add the soy milk, stirring constantly until mixture is silky and smooth like cake batter. Fold in the chocolate chips.
3. Line cupcake pan with cupcake paper/liners. Pour the muffin batter into the liners. Pop into the oven.
4. Wait about 10 to 20 min. Take out of the oven and let cool for 5 min.
