4 potatoes, diced into hashbrown size pieces
1 tablespoon oil
4 green onions, sliced, divided
salt and pepper, to taste
1 teaspoon chili powder
1 teaspoon garlic powder Cheezy Sauce:
4 slices vegan cheese
2 tablespoons vegan butter
nondairy milk, as needed
1. Microwave potatoes on high for 4-5 minutes or until cooked. Fry them with 3 of the green onions in oil, until browned. Season.
2. Microwave the cheese and butter for about 1 minute and whisk in some milk. Microwave again for about 30 seconds.
3. Add milk as needed to reach desired consistency. Top the potatoes with the cheezy sauce and remaining green onions.
