1 1/2 cups of spinach leaves
1/2 table spoon red kidney beans (canned, or cooked)
1/2 large tomato, sliced
1/2 cup red sweet grapes
1 handful sunflower seeds
1/3 of whole cucumber, sliced
1/4 cup beets, sliced and diced (canned or cooked)
1 handful almonds, sliced or whole (whatever your preference)
1 handful chopped baby carrots (optional)
olive oil and vinegar dressing (I use Newman's Own) (amount variable to taste)
1 handful cooked lentils
Put spinach leaves in large mixing bowl, add in beans and beets, then toss with tongs or washed hands. Add in grapes and carrots, repeat tossing. Put in tomato and cucumber and repeat process.
Sprinkle lentils, almonds, and sunflower seeds, then pour olive oil and vinegar dressing over salad. Toss once more and serve.
