1 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon dried oregano
1/2 teaspoon crushed red pepper
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 teaspoon salt
3 medium sized sweet potatoes, cut into wedges
2-3 tablespoons olive oil
1. Preheat oven to 400 degrees F. Using a mortar and pestle or spice grinder, coarsely grind coriander seeds, fennel seeds, oregano and red pepper. Combine with other spices.
2. Toss potato wedges in enough oil to coat evenly then toss with spices.
3. Spread wedges on a baking sheet and bake for about 40 minutes or until browned, flipping over the wedges with a spatula halfway through. Enjoy!'
