2 cups baby spinach
1 tablespoon chopped red onion
1/4 avocado, cubed
1/4 tomato, cubed
1 inch of a cucumber, thinly sliced
2 mushrooms, thinly sliced
handful each of alfalfa sprouts, unsalted sunflower, pumpkin seeds, and hickory smoked whole almonds
sweet and creamy poppy seed dressing (check ingredients)
I also add cubed marinated tofu that I have on hand in the fridge all the time OR left over seitan
This is a salad...if you've made one you've made them all.
BUT, for those of you who haven't...........
Put every thing on a plate together and top with dressing.
PS: (to make it a little more smoky I add fake bacon bits too.)
