2 onions, sliced
1 lb. fresh or frozen green beans
1 28 oz. can of petite diced tomatoes
1 1/2 tablespoon dried parsley
2 teaspoons salt
1/2 teaspoon or more of pepper
1/2 cup extra virgin olive oil
1 cup water
Slice onions, and place in a large pot. Dump green beans on top of that.Dump all seasonings on top.Pour on olive oil.Pour on water.Do not stir.Place your pot on medium fire for 45 min. Covered.
Stir all together, cook for another 30 min. or until green beans are all yummy and tender.
If the green beans start sticking to the pot, or just become all dried out...you can add another 1/2 cup water.
This can also be done in a slow cooker :)
