8 oz extra firm tofu (approx)
seasoning for tofu: I like Braggs or soy sauce, garlic, oregano, basil, and some chili garlic sauce
Cube potatoes into bite size pieces. Cook in small amount of vegetable oil with some salt and pepper. (I make extra to use in Soyrizo burritos the next morning) Start at a low heat, covered to cook, then turn up heat uncovered to brown. Stir occasionally.
Chop tofu into small pieces. Fry in separate pan with seasonings, using the same technique.
Layer steamed rice, broccoli, potatoes and tofu. Sprinkle with a little Braggs and enjoy :)
