4 Tablespoons butter alternative
1 large leek, or 1 onion
2 lbs of sliced carrots
1 can of black eyed peas
6 cups of vegetable stock
2 teaspoons coriander (opt)
3 teaspoons curry powder
garlic to taste
salt and pepper to taste
Melt butter alternative in pot. Saute leek/onion until caramelized (about 5-10 minutes).
Add vegetable stock, peas, carrots, curry and garlic. Let cook for about 45 minutes to an hour (very forgiving, and hard to over cook).
Garnish with coriander when serving, or just eat as is. Enjoy!
