2 cups basmati rice, uncooked
2 tomatoes, chopped
1 large red bell pepper, chopped
1/2 red onion, chopped
2 tablespoons chili powder
2 teaspoons onion powder or onion salt
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon oregano
1/2 teaspoon salt (omit if using onion salt)
1 1/2 cups black beans
1. Prepare rice according to package instructions (about 30 minutes). Add juice of 1 lemon to the cooked rice.
2. Combine vegetables with the seasonings to make the salsa. Spoon rice onto a plate or bowl.
3. Spoon some beans on rice, and then the salsa. Enjoy!
