8 ripe tomatoes, sliced
3 1/2 ounces vegan cheese (I use cheddar style with chives Sheese)
1 onion, chopped or 2 spring onions (white part only), chopped
2 garlic cloves, minced
salt and freshly ground pepper, to taste
dry or fresh basil, to taste
oregano, to taste
1. Arrange the tomatoes in one layer on a lightly oiled oven dish. Add the vegan cheese.
2. Sprinkle the onion and garlic, salt and pepper. Put in a cold oven and heat to 400 degrees Fahrenheit.
3. Bake for 20 minutes, add herbs and bake for another 5 minutes.
Serve with fresh crusty bread.
