1 sweet potato (yam), diced
2 tablespoons Dijon vegan mayonnaise
1 1/2 tablespoons pickle juice
1 tablespoon minced purple onion
1 tablespoon garlic chives, minced
1 grind sea salt and black pepper
1. Boil sweet potato until tender. Drain.
2. Mix with remaining ingredients.
3. Smoosh potatoes to desired consistency.
