2 cups corn (canned or frozen)
3/4 cup soy milk or other non-dairy
1 teaspoon chipotle or chilli powder
salt and pepper to taste
In a food processor, puree corn. In a saucepan, bring pureed corn, soy milk, and spices to a boil over medium heat. Mix and serve.
Optional: Garnish with green scallions and vegan sour cream.
