1 (16-ounce) bag slaw mix (the kind with the green cabbage, red cabbage, and carrots)
1 (11-ounce) can mandarin oranges, drained
1/2 cup Asian-style salad dressing, or to taste
1/4 cup slivered almonds, toasted
2 green onions, chopped
pinch ground ginger
In a bowl, combine all ingredients. Refrigerate 20 minutes before serving.
This recipe makes a lot but it doesn't keep amazingly well in the fridge for more than 1 to 2 days, so if you don't plan to eat it all in a timely manner, beware. This would be a great picnic food, especially since it would still be good room-temperature.
