2 (1 ounce) packets vegan dried vegetable soup mix
3 large potatoes, cubed
5 cups water
1/2 cup plain nondairy milk (I use soy)
3/4 teaspoon rosemary
3/4 teaspoon thyme
salt and pepper, to taste
1 clove garlic, minced or garlic powder
1 small onion, chopped
2 celery ribs, chopped
1. Throw everything in a big pot.
2. Let it simmer for at least 1/2 hour, covered.
And that's it. This makes a ton of soup and is great for leftovers.
