4-5 slices fresh multigrain bread
egg replacer for 3 eggs
2 med size carrots
1 small onion or 1/2 a big onion
1 teaspoon mixed dried herbs any if fine
2 teaspoons tomato sauce or for the lack of use ketchup which is what I did
2 teaspoons vegan Dijon mustard or regular if you dont have any
1 can (415 grams) nut meat
1-2 teaspoons fresh parsley or the one from a squeeze tube (so handy)
1 teaspoon veggie stock powder
5 teaspoons olive oil (or enough to coat the whole pan without tilting)
nonstick oil spray
2 teaspoons minced garlic
1 teaspoon garlic powder
In a blender crumble your multi grain slices till you get about 1 1/2 to 2 cups of loose bread crumbs. (set aside)
Then cut the onion and carrots into mini pieces. (set aside)
Take out nut meat from can and then place in a mixing bowl, once in please mash so it may become easier to cook with. (set aside)
Preheat the oven to 200 C.
On a round pan (yes I know but its the only one I had) , spray your nonstick oil and add the crumbs in.
Then heat up a fry pan on med heat and add oil.
Add in your onions and carrots and saute till soft looking not brown, approximately 2 minutes.
After add in your nut meat, garlic powder, and garlic and keep turning until you can't smell the nut meat anymore (it smells so bad). After 5 to 6 min it should dissipate if not then take off heat anyway.
Now back to the round pan, add your veggie stock powder, dried herbs, and mix.
Slowly add in the nut meat with veggies... stirring as you go so that it's mixed.
Once all the "meat" is in, add in tomato sauce and mustard and mix.
Once all incorporated then make a pocket by pushing some of the mixture to the side of the pan, add egg replacer and mix well.
If you have a mixer then just chuck everything in there and mix for a few min and put back into the pan. I just don't have fancy things like that :/
Finally chuck it in oven for about 20 min (keep checking on it) and then take out when the top is the brown colour you want it to be. Remember if you leave it in too long it might be dryyyy! And no one wants that my friends.
Remove from oven. You don't even have to cool it, cut it up and serve! Yummmmmmmmmmmmmmmmmmmmmmmmm!
