1/4 cup flour
1/4 cup sugar
1/4 teaspoon baking POWDER
3 tablespoons cocoa powder
3 tablespoons soy/rice milk
1/4 cup vegan chocolate chips (optional)
1/4 cup walnuts
2 tablespoons pure maple syrup (mandatory)
1 tablespoon melted butter substitute
pinch of salt
In a microwavable bowl combine all dry ingredients (flour, sugar, cocoa, baking powder, salt, walnuts, and choc. chips).
Next add soy/rice milk, melted butter, maple syrup and stir until a consistent fudge like batch appears.
Spread evenly in your bowl and microwave until the full brownie rises including the center then it is done (2 1/2 to 3 minutes).
*I got the idea to add the maple syrup from a cupcake chocolate frosting in the book VCTOTW, it seems to make this brownie extra fudgy and less cake-like. Fudgy...did I just create a word? hmmmm
*Have some left over vegan icing from cupcakes or choc. gnache to drizzle on top? Takes this brownie to the next level!
Source of recipe: I tried a bunch of different microwave brownie recipes and something was missing...so I created my own.
