1 cup loosely packed basil
3 cloves of garlic
2 tablespoons olive oil
2 teaspoons minced roasted garlic
1 tablespoon nutritional yeast
garlic salt, to taste
pepper, to taste
1/2 small onion, sliced somewhat thin
1. In a blender or food processor, add basil, garlic cloves, olive oil, roasted garlic, nutritional yeast, garlic salt, and pepper. Blend with up to 1/2 cup water as needed to get everything mixed. The pesto should be more of a sauce than a paste.
2. Transfer to saucepan and mix in onions. Heat the sauce until the onions are cooked through.
This would be good with pasta, you could add artichokes, sundried tomatoes, olives, etc. Or, it'd be good as a spread in a sandwich.
