vegan margarine, as needed (I used Smart Balance Light)
1 medium sized flour tortilla
1 to 2 tablespoons vegan cream cheese (I use Tofutti)
2 slices tomato
2 tablespoons guacamole
5 slices avocado
1 green onion, diced
1 tablespoon diced jalapenos
1. In a large skillet over high heat, melt the vegan butter and put the tortilla into the pan.
2. Heat the tortilla on both sides and then scatter chunks of the cream cheese on 1/2 the tortilla. On the other 1/2, add tomato, guacamole, avocado, green onion, and jalapeno, or whatever combo you choose.
3. Fold the tortilla in 1/2, and continue to cook the tortilla until it is lightly brown.
