1 tablespoon extra virgin olive oil
1/2 cup frozen peas
1/2 cup garbanzo beans, drained and rinsed
sea salt and pepper, to taste
sprinkle dried basil
2 tablespoons vegan sour cream (I use Tofutti brand)
1. Heat the oil in a small frying pan. Throw in the peas and garbanzo beans.
2. Season with salt, pepper, and basil. Cook for 5-6 minutes on medium heat.
3. Put in a bowl and top with vegan sour cream and mix until coated.
Source of recipe: I made a quick little fry-up of peas and garbanzo beans for my daughter for lunch and liked them so much I made them for myself, but tweaked it a bit. It's quite a delightful little lunch.
