2 3/4 cups spelt flour
1 teaspoon baking powder
1 teaspoon salt
cinnamon, to taste
nutmeg, to taste
3/4 cup sugar
3/4 cup brown sugar
1 cup vegan butter (I use Earth Balance)
1/2 cup applesauce
1 teaspoon vanilla
1 1/2 cups quick cooking oats
1/2 cup dates, finely chopped
1. Preheat oven to 375 degrees F. Combine the dry ingredients. (flour, baking powder, salt, cinnamon, and nutmeg) Mix with a whisk. Using some sort of electric mixer, beat the "butter" with the sugars until smooth.
2. Add the applesauce and vanilla and beat again. Combine dry and wet ingredients. When they are smooth, add the oats and dates.
3. I like to chill this dough before baking for the best finished product. Drop onto cookie sheet. Bake for 12-13 minutes.
If you want to reduce the butter and add more applesauce, I have done that and it works great. You could use regular (wheat) flour in place of my spelt, but you should probably use less since wheat rises better than spelt.
