2 - 6 ounce cans tomato paste
1 large yellow onion, chopped
4 cloves garlic, minced
1/2 red bell pepper, chopped
pinch of pepper and basil
handful of baby spinach, chopped
handful of chopped broccoli
veggie broth, as needed
vegan parmesan, as desired for garnish
1) Put a skillet on medium heat. Add splash of veggie broth and the onion and red bell pepper. Cover and let cook for 10 minutes, stirring occasionally. Add garlic and spinach and a little more veggie broth and cook for 1 to 2 minutes, stirring once or twice. Remove from heat and add tomato paste and spices.
2) Spread on pizza and garnish with the broccoli. Cook pizza and sprinkle with vegan parmesan. Enjoy!
