3 tablespoons plain hummus
3 tablespoons tomato, diced
1 tablespoon vegan sour cream
3 baby spinach leaves, chopped/ripped up
black pepper, to taste
garlic powder, to taste
Mix all the ingredients together in a heat safe bowl and microwave for 30 to 45 seconds.
Source of recipe: Just kind of threw this together tonight out of the blue to top off my baked sweet potato and it was delish! I'm sure it would work with a russet, too.
