Bread -- as many pieces as you need for the number of people you are serving
2 tablespoon pumpkin puree per slice of bread
1/4 cup (or more) preferred nondairy milk
Sugar and cinnamon
1 tablespoon Vegan Cream "Cheese" per slice of bread
Maple syrup, cinnamon and sugar, as desired, to serve
1) Heat a skillet at medium heat.
2) In a suitable sized dish, pour in the nondairy milk and soak your bread on both sides. Spread a tablespoon of pumpkin puree on each side of the bread and then sprinkle with sugar and cinnamon.
3) Place the bread in the skillet and toast for about two or more minutes on each side.
4) When done, top with one tablespoon for vegan cream cheese and sprinkle with some more sugar and cinnamon. Oh, what the heck, drizzle some maple syrup on it if you want. It’s so yummy…kinda like pumpkin cheesecake!
