6 beets, peeled and sliced 1/2" thick
1/4 cup onion, thinly sliced
3 tablespoons olive oil
2 tablespoons red wine vinegar
salt, to taste
1. Boil beets in lightly salted water until tender. This will take about 30 minutes.
2. Once beets are done, toss beets with onion, olive oil, vinegar and lightly salt to taste.

Source of recipe: I improvised this recipe based on a recent trip to Spain, during which I realized that anything could be made extra delicious by merely adding olive oil and vinegar.
