1 ripe avocado
1 teaspoon lemon juice
1 cup vegan sour cream (I use Tofutti)
8 ounces vegan cream cheese (I use Tofutti)
1 tomato, chopped
1 block vegan cheddar cheese, grated
1 jar salsa
1) Cut avocado in half and remove stone. Scoop out flesh and put in blender with lemon juice, sour cream, and cream cheese. Blend until smooth.
2) Pour onto two plates and sprinkle with lettuce, tomato, cheese, and salsa to taste. Serve with tortilla chips.
