1-1/2 cups cooked quinoa
2/3 cup grated sweet potato
1/3 cup flour
1 tablespoon soy sauce
1 teaspoon baking powder
1 teaspoon minced garlic
1 egg substitute
splash of lemon juice
Serve with a vegan cilantro lime dressing.
1. Preheat oven to 450°F. Oil a baking sheet.
2. Mix all ingredients thoroughly. Divide mix into 8 balls, or however many you come up with. Flatten each ball on baking sheet to make a 4-inch cake.
3. Bake 10 minutes, flip cakes over and bake 10 minutes longer.
