3 medium potatoes, diced and cooked
vegan mayonnaise, to taste
1 (15-ounce) can three-bean salad
1/4 cabbage, chopped into small strips
1 large carrot, grated (use the smaller grater size)
1/2 celery stalk, finely chopped
1/2 onion, finely chopped
1 large clove garlic, minced or pressed
heavy pinch Italian seasoning
small pinch salt
pinch black pepper
1. Put the cooked potatoes in an ice water bath until cold. Add cold potatoes to a bowl and toss with a touch of mayonnaise.
2. Fold in remaining ingredients.
Try mixing regular and sweet potatoes and using additional seasoning like parsley!
