1 cup water
1/2 cup dry quinoa
1/4 to 1/2 onion, chopped fine, to taste
2 to 4 tablespoons favorite variety of salsa, to taste
1 tablespoon chili powder, to taste
1-1/2 inch piece fresh ginger, peeled and grated
2 cloves garlic, minced
1/4 teaspoon cayenne
handful of spinach or kale, chopped
splash lime juice
pinch salt (optional)
1. Combine all ingredients into medium sized pot. Stir well and bring to boil then cover and reduce heat to low. Let cook for approximately 20 minutes, or until quinoa is fluffy and there is no remaining liquid.
2. Top with favorite veggie stir fry or enjoy as is.
Source of recipe: This is my favorite way to make/eat quinoa. I've never really been much for following a recipe without making a bunch of changes,and like a lot of flavor so here is an approximation of what I generally add in.
