1 teaspoon lemon or lime juice
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
pinch black pepper
1 tablespoon diced jalapeno (from jar or fresh)
1/4 tomato, seeded and diced
4 slices of bread
vegan mayonnaise (I use Vegenaise)
1. Guacamole: Add avocado pulp to a small bowl. Add lemon juice, cumin, garlic powder, onion powder, salt, and pepper. Mash with a fork to desired consistency. Add jalapeno and tomatoes. Mix with the fork.
2. Butter one side of a piece of bread with margarine. Place it in the frying pan (without heat).
3. Coat the other side of bread with vegan mayonnaise. Place guacamole on the mayonnaise slide of bread. Coat the inside slice of another piece of bread with veganaise and place it on the guacamole. Then butter the top with vegan butter. This will all help your hands and countertops stay clean!
4. If your frying pan is big enough, then you can now prepare the second sandwich before turning on the heat. Turn on the heat and fry until golden brown, flip, repeat, and eat!
