2 tablespoons olive oil
1/2 onion, chopped
1 tomato, seeded and cut into cubes (optional: peel)
1 zucchini, cut into cubes (optional: peel)
any other vegetable (I use vegetables with a different color from the ingredients)
5 tablespoons tomato sauce
salt, to taste
pepper, to taste
penne pasta, cooked (add in a suitable amount for an individual serving)
basil leaves (optional)
1. Boil your 'optional' vegetable in a pot, if necessary.
2. Sauce: Heat olive oil in a pan over medium heat for 30 seconds. Add in the onions, after 30 seconds add in the tomato, the zucchini and your 'optional' vegetable. Stir it a little bit.
3. Turn the heat to low and add in the tomato sauce. Add salt and pepper. Mix it a little. Let it stay there for 5 minutes.
4. Put the penne in a plate and when the sauce is ready place it over the penne. Decorate it with basil.
It is delicious, fast and easy! You can also improvise with any veggie that you find lying around in your fridge! Just use it raw or boil it for 10 minutes and then cut it into cubes!Enjoy!
