1 onion, diced
1 potato, cubed
1 (1 pound) bag 15 bean soup, soaked overnight
1 (15 ounce) can tomato sauce
1 (15 ounce) can Italian diced tomatoes
1 tablespoon onion powder
1 tablespoon garlic powder
1/2 tablespoon vegan chicken style seasoning (I use McKays)
1 bag (10 ounces) frozen carrots and peas
1. Saute onion and potato in sauce pan for a few minutes, just to get them started.
2. Add all ingredients except veggies to crockpot. If you are cooking on high, it will take about 3-4 hours; you need to make sure to cook until the beans are soft.
3. Add veggies about 30 minutes-1 hour before eating.
Source of recipe: I bought a bag of 15 bean soup mix, but of course the soup mix recipe is filled with meat, so this is the alternative I came up with.
