2 vegan burger patties
1 mini loaf French bread
1 small onion, thinly sliced (1/4 cup when prepped)
2 teaspoons sugar
vegan white cheeses (I used soy mozzarella/feta)
2 tablespoons pesto (or crushed garlic/Italian seasoning)
salt and pepper, to taste
1. Preheat oven 400 degrees F. Place patties in oven, or follow directions on box. (if you are substituting garlic/herbs for pesto in this recipe, brush it onto patties halfway through cooking)
2. Slice your bread longways and hollow-out to make room for filling. Saute onion in olive oil, on medium heat until it begins developing color, then throw in the sugar to coat until caramelized.
3. Remove onion from heat until ready to use. Spread a thin layer of pesto onto your bread, top with your cheese, sprinkle with salt and pepper. When patties are finished, cut up into chunks and arrange inside each side of bread halves to make it fit. Top with caramelized onions and put together to make sandwich.
4. In a panini maker, press sandwich until ready, enjoy. If don't have a panini maker, brush a flat pan with olive oil and put on medium-high heat, use another pot or pan and press on top. Flip sandwich and press again, enjoy.
